This is just my personal take on cranberry sauce, a dish often served during Thanksgiving and Christmas in the United States.

Yield: Enough for ten servings of turkey
Ingredients
- 12oz (350g) bag fresh cranberries
- Juice of one orange
- 200g (1c) granulated sugar
- 50g (½c) walnuts, roughly chopped
- Strips of zest of half a lime
- 1 stick cinnamon
- A few thin slices fresh ginger
- Pinch of salt to taste
Directions
Empty cranberries into a sufficient saucepan, reserving one handful. Combine remaining ingredients. Cook over low flame, stirring frequently till sugar dissolves: about 10 minutes. Increase flame to medium and cook until most of the cranberries burst: about 10 more minutes. Reduce flame to low and stir in reserved cranberries. Remove lime, cinnamon and ginger. Serve warm, or serve completely chilled.
